Now that fall is here and we are headed into October AND I have a day off from playdates and theme parks, I thought I'd make a moist, delicious, and HEALTHY vegan pumpkin bread.. I adjusted the reciped from one of my favorite sites, Hell Yeah It's Vegan. I love this recipe because it combines a lot of spices with healthy pumpkin, flavorful spelt flour and spices like allspice and nutmeg.

You can also add the optional walnuts and chocolate chips if you want to really turn this into a hearty snack.
The TRICK to this bread is to let it sit in the pan for 20 minutes after baking. THEN put it on a cooling rack. I find the bread stays together a lot better this way.
I like to make 2 loaves, (and freeze one) so I made it easy for you if you want to do the same by doubling the ingredients below...
Cook time: 45-50 mins
Serves: 1 loaf
Ingredients:
¾ c flour
1c spelt flour
¾ c packed brown sugar
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ tsp nutmeg
½ tsp cinnamon
½ tsp allspice
1 cup pumpkin purée
½ cup coconut oil
3 Tbsp maple syrup
2.5 Tbsp water
Optional:
½ cup finely chopped walnuts
1/4 cup semi-sweet chocolate chips
Two loaves:
1 1/2 cup flour
2 cup spelt flour
1 1/2 cup packed brown sugar

1 tsp salt

6 Tbsp maple syrup
5 Tbsp water

Instructions:
First, preheat oven to 350°F.
Then, grease and flour a loaf pan. I use Made in the USA bakeware, so I don't have to grease my pans!
In a large bowl, mix together flours, sugar, soda, baking powder, salt, and spices.
In a small bowl, whisk together pumpkin, oil, syrup, and water. (I like to do this in my Cuisinart)
Combine wet mixture with dry and you will have a nice sticky mixture. (I also do this in my Cuisinart, pulsing until combined)
Fold in walnuts and chocolate chips.
Pour into prepared pan(s) and bake for 45-50 minutes or until top is browned and a toothpick inserted in the center comes out clean. (20 minutes for muffins)
Let cool 20 minutes in the pan.
Then, invert onto a cooling rack.
