I was feeling like an oatmeal cookie this morning and found this simple and somewhat healthy recipe - The Ultimate Vegan Oatmeal Raisin Cookie by Oh She Glows.
I made my own adaption like switching to a nuttier spelt flour, a little bit of salt (I love the salt and chocolate combo) and doing the chocolate chips instead of the raisins. They were delish!
What you need:
1 3/4 cups walnuts, toasted
2 cups oats
3/4 cup spelt flour
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp cinnamon
1/2 cup maple syrup
2 tbsp almond or soy milk
3.5 tbsp coconut oil
2 tsp pure vanilla extract
2/3 cup chocolate chips
1/4 teaspoon of salt
Preheat oven to 350F
Preheat oven to 350F
Place 1 3/4 cups of walnuts on the baking sheet and bake for 10 minutes or until toasted without burning.
Put walnuts in food processor and blend until they are ground completely.
In your large mixing bowl, mix together the flour, baking soda, 1 cup oats, salt, cinnamon, and brown sugar and blend for 20 seconds in the food processor.
In your large bowl, mix liquid coconut oil (microwave if it is solid), maple syrup, almond milk, and vanilla, and add into food processor. Run until well mixed.
Pour mixture from processor into a large bowl and add 1 cup of oats. Add the 2/3 cup of chocolate chips.
Take about 1-2 tbsp of dough, make a ball, flatten into a disk and place on the baking sheet.
Bake for 10 minutes at 350F.
Let sit for 2 minutes before moving each cookie onto a cooling rack.
Makes about 20 medium size cookies.
