3 Ingredient Easy Vegan Chili


I love this Chili recipe because you can throw it together in 2 minutes and it is a hearty dinner on its own or it can go along with a veggie dog or my Vegan Nacho Cheese and piled on top of corn chips. I admit, it's on the semi-homemade side because what pulls it all together is a jar of salsa but it is meat-free, gluten-free, and healthy!





Now you are perfectly welcome to get a can of tomato sauce, hell, grow your own tomatoes for all I care. I'm sure chili that you slave over will be waaaay better than mine. Maybe we should have a chili cook-off where we shall see! All I know is, I throw 3 ingredients in a pot, heat it up, let it simmer for a little bit and bam. It's darn good.



My cheese, on the Chili Cheese Nachos is slightly more complicated but once you get the hang of it and remember to soak your cashews for 2-3 hours at least, it will come together pretty quickly.

What You Need:
2 cans of three bean mix
1 jar of your favorite salsa
1 bag of vegan meat crumbles
optional 1 tsp chili powder
optional 1/2 tsp cumin

What You Do:
Put all ingredients in a pot on the stove set to medium heat stirring occasionally until it begins to bubble then let simmer on low, covered, until the beans and meat soak up all the flavor from the salsa. This can also be done in a crockpot.
