Vegan Avocado BLT




When I was growing up, my mom would make us vegetarian BLTs all the time. They were savory and delicious. She made them on toasted white bread and triple-stacked them just like they would do in a New Jersey Diner. Now that I'm California Girl, just about longer than I was in NJ, I have a new spin on my old favorite and have spruced it up to be a completely vegan. Here's my secret to making the BEST Vegan Avocado around...
What you need:
2 Slices Toasted Bread
3 Slices of your favorite vegan bacon (we used Lightlife Fakin' Bacon and it is delish!)
Several Slices of tomato
1/2 avocado
lettuce
vegan mayo (we used Just Mayo)

What you do:
Spread a generous amount of mayo on both slices of toasted bread.

Slice avocado and spread onto one side.

Stack tomato slices, vegan bacon, and lettuce.

Smash into face. Repeat.


The mayo is the most important part of this sandwich. That's my secret which is no longer a secret. You must use enough mayo for that savory deliciousness to drip through this sandwich. Don't skimp on it, you will be disappointed.


Then, be generous with the avocado and lettuce as well. I know you just slathered what seems like 7 servings of mayo on your sandwich, but c'mon let's not forget to be healthy!


Then add your sliced tomato and bacon and you are good to go!


Try variations with or without tomatoes, avo, or lettuce for your picky eaters!
