Spelt Flour Chocolate Chip Cookies


Can you make chocolate chip cookies with spelt flour? Yes! I ran out of white flour a few weeks ago and used spelt flour to make the traditional Nestle Toll House cookies instead. 

They were really delish! The spelt flour gives the cookie a nutty flavor without using nuts!

Spelt flour is also lower in calories and lower in gluten.



To make the recipe even lighter in my adapted recipe, I took out a stick of butter, and I still liked 'em.
Yes, an entire STICK of butter was removed from the Nestle recipe, so if you are missing it go ahead and up the butter!

Prep:15 mins
Cooking: 9 to 11 mins
Makes 30 cookies big cookies

Ingredients:
2 1/4 cups spelt flour
1 teaspoon baking soda
1 teaspoon salt
1 stick butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) Semi-Sweet Chocolate Chips
OPTIONAL: 1 cup chopped nuts

Directions:
PREHEAT oven to 375° F.

Combine spelt flour, salt and baking soda in small bowl

Beat butter, sugars and vanilla in large bowl. 

Add eggs, one at a time, beating after each egg. 

Slowly beat in flour mixture. 

Stir in chocolate chips. 

Place spoonfuls of cookie dough onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. 

Cool on baking sheets for 2 minutes.

Place on wire racks to cool.

  1. spelt flour? i had never heard of that. but good to know it's lower in gluten than regular flour. i'll have to pass this on to a friend who is allergic to gluten
