Grandma's Vegan Banana Bread


This is the most delicious vegan banana bread. It is my mom's recipe. She has been buying too many bananas and making banana breads every month or so forever!



First off, she swears by this whole wheat flour:



The flour only comes in a 25 lb package from Amazon, but if you like to buy in bulk, it can be a good deal. It is organic, and it makes the bread taste really good. We also mix it with spelt or white flour, depending what we are feeling.


These are the fair trade chocolate chips my mom uses in her vegan banana bread. They are delicious!




I love her little bread pans. She can't remember where she got them!


Grease it up! We use organic vegan buttery spread and a paper towel.


Make sure your bananas are RIPE.


Wish together your sugar and canola oil. I get my organic canola oil from Vitacost.


Mash your bananas a few at a time with a fork.


Add the mashed bananas, water, and vanilla to the sugar and canola mixture and mix well. 

Then, add the flour, baking soda, and salt to the mixture and mix well. We like the one bowl method because it is easy and cleans up well.


Chop your walnuts.




Add your optional chocolate chips and chopped walnuts.


Once your batter is mixed well, pour into your greased pans.


Bake your breads for 40 minutes at 350.


Slice and enjoy!



If you would like to freeze your bread and enjoy later, slice first, then freeze.

I'm going to eat some right now!

ingredients:

  • 8 medium sized ripe bananas
  • 1 1/2 cups sugar
  • 2/3 organic canola oil
  • 1/2 cup water
  • 2 tsp vanilla
  • 4 cups whole wheat pastry flour or any combo or spelt, whole wheat, and part pastry flour
  • 3 tsp baking soda
  • 1 tsp salt
  • 1/2 cup vegan chocolate chips (optional)
  • 1 cup whole walnuts (optional)
  • Makes 4 small 4x8" banana breads or 2 large 5x9" banana breads.

How to cook Vegan Banana Bread

  1. Preheat oven to 350 degrees.
  2. Grease your bread pans.
  3. Whisk the sugar and the canola oil together.
  4. Mash the bananas with a fork in a dish.
  5. Add the mashed bananas, water, and vanilla to the sugar and canola mixture and mix well.
  6. Add the flour, baking soda, and salt to the mixture and mix well.
  7. Chop walnuts to desired size.
  8. Stir in chocolate chips and chopped walnuts.
  9. Pour your mixture into your greased bread pans.
  10. Bake at 350 degrees for 40 minutes or until your toothpick comes out clean.

  6. OMGosh those look good. I will definitely have to try this recipe. Oh and I love your chopper ... I'm a Tupperware Consultant and use my Tupperware pieces ALL THE TIME, not just for parties and shows, because they are that good.
