Chocolate Oatmeal with Almond Butter and Maple Syrup

Here's the yummy oatmeal I made for the little guy this morning. We do oatmeal a lot for breakfast. It is fast and easy to make. It's also very healthy and filling! I use the Bob's Red Mill Organic Oats Rolled Regular and there is 7% of my protein and 15% of my iron for the day per serving! My little kid is probably getting a lot more than that from this hearty breakfast.

To keep oatmeal from becoming mundane and boring, I like to try variations of the basic recipe. Today, I added cocoa and almond butter to my usual salt and maple syrup additions.

Makes 2 servings.

What you need:
1 cup dry rolled oats
2 cups water (or you can mix some soy, almond, or other milk for half or more for the liquid)
1/4 tsp salt
1 tbsp maple syrup (maybe a little drizzle for topping, too)
1 tbsp cocoa powder

Optional toppins like Almond butter, banana slices, or???

What you do:
Bring your rolled oats and water to a boil, add in your cocoa powder, then turn the heat down to low, stirring occasionally for up to 10 minutes or according to directions on your package of oats.
Stir in salt, and maple syrup.

I like to add a nice scoop of almond butter on top and drizzle a little bit of maple syrup. I also realized a banana would taste yummy with this so I tossed some slices on, too!


Get that spoon in there...


Oh yeah, and bananas!
