Recipe - Vegan Apple Crisp



Once again, I was stuck with an overabundance of apples. There were just so many different varieties offered from my food CSA delivery from Farm Fresh to You, here in California, that I kept adding them to my box. They started piling up each week, and soon, it seemed like everyone was getting tired of eating them. Then we went on a little trip and it seemed like they multiplied by the time we got home!

What do you do with too many apples? Bake! I got this great recipe from Hell Yeah It's Vegan which I changed ever so slightly to suit our tastes and everyone loved it! Even my SUPER picky hubby who doesn't like pie (who doesn't like pie?!?!) liked it. I'm thinking he doesn't like pie crust because this apple crisp is basically like apple crumb pie without the crust.

If you have ice cream, or vegan ice cream, this apple crisp goes great with a scoop of ice cream, but it is just as delish on its own.

What You Need:
7 cups apples peeled and sliced about 1/2" thick
1 cup sugar
1 cup water
2 Tbsp cornstarch
1 Tbsp cinnamon
⅛ tsp ground nutmeg
1 cup whole wheat pastry flour (or any flour you like)
¾ cup quick oats (I put rolled oats in my food processor)
1 cup brown sugar
½ cup vegan butter, softened
What You Do:
Preheat oven to 350 degrees.
Put your sliced apples in a 9x13" baking dish.
Whisk sugar, water, and cornstarch in medium saucepan on medium heat until liquefied and thickened.
Pour mixture over apples evenly.
Sprinkle the nutmeg and cinnamon over coated apples.
In a large bowl, mix together flour, oatmeal, and brown sugar, then work in the butter.
Pour mixture evenly over the apples and press lightly.
Bake for 45 minutes or until topping is golden.

Serve hot and enjoy!
