Blueberry Pecan Oatmeal Bowl


I scored some Organic Lingonberry Preserves and organic bluberries from Costco the other day, so I just had to cook some of them into my oatmeal. Of course I could not get enough, so I poured a ton of fresh ones on there as well and made it super healthy and delicious with a generous helping of pecans. This oatmeal happens to be top to bottom organic, too!


Here's what's in my oatmeal: 
rolled oats
water
chia seeds
blueberries
maple syrup
cinnamon
salt

What's on top:
Almond butter
 MORE blueberries
pecans

How I cooked my oatmeal concoction:
Boil oats with water at a 1:2 ratio per the package. I usually add in additional water when I'm including chia seeds, which I did, here. I usually add about 1 tbsp chia for every 1 1/2 cup oats in my oatmeal and an additional 1/2 cup of water for every tbsp chia. Then I tossed in a handful of fresh bluberries. Once everything is cooked, I add a pinch of salt, a few dashes of cinnamon, and mix in a quick pour of maple syrup.


And don't feel bad if your kids won't eat this, neither will my kid OR my husband. The kid wants his oatmeal like this and his nuts and berries on the side (see below). His daddy wants his oatmeal PLAIN with only a little bit of Chia seeds (not worth even taking a photo of that one) and his nuts and berries on the side, and his almond butter in the jar where he things it should stay. No biggie. They get it their way around here and it's healthy any way you look at it!
