Chocolate Peanut Butter Oatmeal



I did a lot of research, this morning, on healthy treats, mainly healthy vegan frosting, for cupcakes and cakes. I love baking and eating sugar, but I know it isn't healthy and my 3 year old just loses his mind when he gets too much sugar and it's not pretty. I have a bunch of recipes and ideas that I'd like to try, but being just about full term with my pregnancy and just so wiped out, the best I can do right now is make a yummy breakfast to carry us through a good chunk of the day.

With all the reading and pinning of sweets, I decided to go chocolaty and almost dessert-like with my oatmeal this morning. I actually mixed my banana into the cooking oatmeal, a spoonful of chia seeds, and stirred in a dollup of peanut butter and heaping tablespoon of cocoa powder. Of course I used extra water, but still left it thick, how I've been liking it. I added a dash of salt, a few shakes of cinnamon, and a good splash of maple syrup to sweeten it up.



To top off my oatmeal, I sliced up some giant organic strawberries (EVERYTHING in this oatmeal, even down to the cinnamon is organic) and a very small handful of chocolate chips. I thought the chips would just look pretty, but they melted as I was eating the oatmeal and really just made it heavenly. Of course my son had his usual, simple oatmeal with chia, PB and J, made me put his banana on the side and his 6-7 chocolate chips right into his little hand. He doesn't know what he's missing...

If you want to make this oatmeal, I suggest you follow your oatmeal package instructions, adding in about 25% more water than the recipe and just adding everything in to taste and serving size you are going for.

  1. Never have I seen a nice oatmeal recipe. From your dish, I could see also that the oatmeal looks so NOT appealing. Yet I'd love to eat it with the lovely strawberries!
