Healthy Halloween Sweet Potato Hummus Hors D'oeuvres

Here's a cute little hors d'oeuvres I put together the other night. It is made with a cracker, some hummus, and a little nori. It is the perfect kids' snack, a cute thing to bring to a pot-luck or a special appetizer for a Halloween party.

I scored some beautiful sweet potatoes are from Farm Fresh to You here in CA and I roasted them at 350 for 30 minutes or so. I didn't want them turning to mush so I could get nice thin slices and I like to do this once they are cooked because it's easier and has a cleaner look at the end.

Regardless, my picky eaters would not eat these. My son wouldn't even try it with regular hummus but I LOVED them. They tasted great and would be so cute for a Halloween party!


Healthy Halloween Sweet Potato Hummus Hors D'oeuvres Recipe

What you need:
Crackers (if you are serving right away - they will get soggy if they sit) or french bread thinly sliced toasted (if you are prepping ahead of time)
Hummus
Small thin Sweet potatoes
Nori or Seaweed snacks
Olive Oil

What you do:
Clean sweet potatoes. Place in baking dish. Coat lightly with olive oil. Poke holes in sweet potatoes with fork.

Roast sweet potatoes in oven at 350 for 30 minutes or so. They should be tender, but not mushy so they slice easily without falling apart.

Slice cooked sweet potatoes into thin circles.

Place hummus on cracker or toasted bread with sweet potato on top. Decorate with cut up pieces of seaweed or nori.
