This is a homemade vegan cheese recipe. It is made out of cashews and water, mostly. Tapioca starch is the unique ingredient but it is not hard to find or expensive, at least not here in Southern California. Luckily the recipe only takes a little bit of tapioca starch and we brought two 1 lb. bags to Japan and had enough for the whole year!
This is an easy and fast recipe done in less than 10 minutes if you presoaked your cashews (don't worry, you can boil them in minutes too). I made a lot of this vegan mozzarella to go on mini-pizzas including our Hello Kitty Mini-Pizzas and the rest of it just went into quesadillas like this one. I wanted to add the broccoli to make it healthier for the kiddos.

Just follow our recipe for Vegan Mozzarella with Broccoli. It is quite simple.
It is even good as a dip when it is warm off the stove.
For this recipe, we spread it on a tortilla in a hot pan (you can remove the tortilla and place in a dish to do this), with a spatula and place another tortilla on top. Flipping over and browning both sides.
