Easy Vegan Broccoli Mozzarella French Bread Pizza


When we were living in Japan this past year, I couldn't find any vegan cheese that I could buy in a grocery store. I had to make my own. It is a relatively easy and healthy recipe made with just a handful of cashews. I decided to take it a step further and add in some broccoli. With little kids, I always look for opportunities to sneak in some veggies and it worked! The kids loved my Easy Vegan Broccoli Mozzarella French Bread Pizza!

First you will be whipping up a batch of our vegan Broccoli mozzarella recipe.


It is very easy to make this "cheese" with just a few ingredients that we buy in bulk. It can be made on the spot and doesn't need to sit, or chill or anything.


It is made with cashews and Tapioca starch. We get the BEST organic cashews online from Braga Organic Farms grown right here in CA.


Once you have your cheese ready, you can put together your french bread pizzas with a loaf of bread and jar of sauce. OR if you have extra time and want to make a pizza dough and sauce from scratch, go for it! This Broccoli Mozzarella works as a dip, a pizza topping, pasta bake topping, in quesadillas, etc.

Easy Vegan Broccoli Mozzarella French Bread Pizza

prep time: 20 minscook time: 12 minstotal time: 32 mins

ingredients:

1 long loaf of French or Italian bread 
1 Jar of marinara sauce 

instructions:

Lightly toast your French bread sections in the toaster oven.

Spread a spoonful of marinara sauce on toasted bread. 

Spread a good dollup of vegan mozzarella on top and use a rubber spatula and/or your fingers to spread it out. 

Place pizza on baking pan and bake at 400 until cheese puffs up and starts to brown - about 10-12 minutes. Keep an eye that it doesn't burn once it starts browning. Rub a little sauce on the top of the cheese to get the oily, cheesy look.

*Unused cheese can be refrigerated in a sealed container and used within 3-5 days.
