Avocado Mango Quinoa Salad with Sweet Potatoes, Heirloom Tomatoes and Pumpkin Seeds


Here's an awesome salad for this time of the year. It's a little tropical, with mango and avocado, and it's a little wintery and savory with the sweet potato and the quinoa. It has heirloom tomatoes and pumpkin seeds too. I know it seems like a lot of ingredients, but it really made a beautiful salad.



I had some leftover roasted sweet potato, and this great organic pre-washed quinoa from Costco that cooks up in 15 minutes. My pumpkin seeds were just shipped to me fresh from Braga Organic Farms right here in California.


I had some friends coming over this week so I had an excuse to buy some really pretty organic heirloom tomatoes which just tied this tropical looking salad all together.

Here's what you need:
baby lettuce and or spinach or kale
quinoa
mangos
avocados
sweet potatoes cooked
heirloom tomatoe
pumpkin seeds
and your favorite dressing

I laid all of this out as a salad bar the other night and this is what I came up with. I really enjoyed it and I think everyone else did too. Even my husband who hates salad except he made his without the greens. Always has to be salad bar style in my house with all the picky eaters!
