Natural Green Food Coloring and Vegan Green Frosting Recipe


Happy St. Patty's Day!!! Today, my playgroup is having a St. Patty's Day party at the park. I think this is the first holiday I've missed since we joined our playgroups two and a half years ago, but Hubby did an early half day of work so he could take our boy while I'm still trying to get settled with Newborn Baby D.


I was trying to do something somewhat healthy for my favorite 3 year olds, because I have a feeling there is going to be some other sugary snacks and treats at this playdate. These are my Vegan Chocolate Walnut Banana Chocolate Chip Muffins made with whole wheat flour. The frosting is my latest recipe/experiment made with avocado and parsley juice. 

I must admit, the parsley juice tasted a little strong, in my opinion. I think next time, I will either try less, or leave it out all together, but I was tired when I put this together this morning and just went for it!


Here's my green frosting recipe in case you want to give it a go. I already cut the parsley in half so it will not be as strong. You are welcome to add more if you want it more green or the parsley flavor will compliment your food.

If you want to make the muffins, too, it is my Vegan Chocolate Chip Walnut Banana Bread made into muffins by cutting the cook time in half.

What you need:
1 cup powdered sugar
1/2 cup vegan butter, softened
1/2 ripe avocado
1/2 teaspoon vanilla
1/2 teaspoon parsley juice (optional)

What you do:
Put all the ingredients in a food processor and process until smooth.

Yields enough to make shamrocks on 3 dozen muffins or cupcakes.

  5. "Normal" food coloring is so gross - I never thought of using avocado - great idea! I'll have to see about the parsley, though.
