Recipe - The Ultimate Vegan Chopped Southwest BBQ Tempeh Salad


It is officially corn season and we are seriously ready for summer in this house. I have some great ingredients that are almost all organic, all vegan, and screaming summer all the way. I had such a great time making this salad, and it was just to die for! Except nothing died! If you are just so over the boring and played out salads you find on menus these days, try this one. You will NOT be disappointed.


I cooked up the Tempeh on the stove simmering in some Organic Vegetable Better Than Bouillion, then tossed it in the pan with Annie's Naturals organic BBQ sauce. The corn was boiled on the cob, then seasoned with chili powder and cut off the cob.


Then I chopped some lettuce, onion, red pepper, and avocado and I mean chopped. Hubby has reminded me how much better a salad can be when everything is cut up. You literally get a medley of beautiful flavors in your mouth in each chopped bite and you never end up with a pile of lettuce in awkward large shapes versus a pile of veggies.

Last but not least - this salad is topped and tossed with Organicville Non-Dairy Ranch Organic Dressing. I cannot believe this is vegan!

Once I took my lovely Instagram photo, I mixed up all the ingredients, cracked some more pepper on my salad, then went to town. It is truly an amazing salad that I need to have again soon!

What You Need:
Romaine or any lettuce chopped
Avocado Chopped
Corn cut off the cob, fresh, or frozen and seasoned
Red pepper chopped
Red onion chopped
Tempeh cooked with bouillon and cut up
BBQ Sauce
Vegan Ranch Dressing
Cracked Pepper
Salt

What You Do:
Your avocado, Red pepper, Red onion should all be chopped in squares about the size of corn kernels. Your lettuce should be chopped in pretty small strips as well to mix well with each bite. 

I simmered my Tempeh in a small amount of water and Better Than Bouillon, then tossed in BBQ sauce once the liquid boiled off. Then I tossed everything, topped with vegan Ranch dressing, and a little salt and cracked pepper.
