Loaded Vegan Tater Tots Breakfast Burrito


People are always asking what vegans can eat for breakfast. There are something like 20,000 edible plants in the universe, so any combo of the ones you can find in the grocery store should work. This opens a world of possibilities. Since we stopped doing eggs in our burritos years ago, new foods like black beans, rice, and a whole lot of avocado have come into our lives. Why not put it all into our Loaded Vegan Tater Tots Breakfast Burrito


Who doesn't love tater tots?! I find that throwing a pan of frozen tater tots into the oven on a Saturday morning fills the whole house with that delicious breakfast time aroma. Plus, this time of year, you want to do any of your baking before the day gets hot here in SoCal. 


I try to always have a bowl of some type of savory beans or legumes in the fridge and perhaps some quinoa or rice.


Then I add some nice salsa fresca or even our favorite jar salsa or some chopped onions and tomatoes and a perfectly ripe avocado to slice in.


Then you finish off this gorgeous vegan tater tots breakfast burrito with - you guessed it... tater tots!



Loaded Vegan Tater Tots Breakfast Burrito Recipe


What you need for this spectacular burrito:

Large flour tortilla
Tater tots
Rice - can sub quinoa or???
Beans (I like mine cooked from scratch with Better Than Bouillon or drained and simmered with water and Better Than Bouillon)
Avocado slices
Salsa or chopped tomatoes and onions
Hot Sauce to taste

Wrap and enjoy!
